Rice nurtured by the clear streams of Satoyama is swiftly cooked in a thick earthenware pot with local spring water, sealing in its full flavor—a simple, yet deeply elegant specialty.

Dashi Broth

A drop infused with
sea and earth.

We offer four unique varieties of dashi, each made exclusively from natural ingredients like bonito, tuna, horse mackerel, kelp, shellfish, and mushrooms, carefully extracted to bring out their natural umami.

The beauty of dashi lies in how the flavors of mountain and sea—all drawn from nature—blend together to create deep, layered umami. Savor it slowly, like taking a deep breath in the vast, pristine nature of Futtsu.

Dashi Supervision by Kihachi Kumagai

Born in Tokyo in 1946, Kumagai served as executive chef at Japanese embassies in Senegal and Morocco, before refining his craft in France as a hotel section chef. After returning to Japan, he founded the iconic restaurant KIHACHI and went on to create numerous renowned culinary establishments. To this day, he continues his culinary journey, traveling across Japan in pursuit of food that is both safe and truly delicious.
